Everything that Hermione is telling her parents is exactly what needs to be said. She isn't lying to them, but she is protecting them by specifically not saying certain things. As Muggles, they wouldn't be able to protect themselves from magical means, particularly those that encourage honesty.

She knows that he knows that she knows... about horcruxes but neither can say , what a hoot!

I wonder why Hermione doesn't meet Severus more often at night, she is in that tent all alone after all, she could pop out after the boys go to bed.
