When she got there, he just assumes that she is there to refuse him, so he's building up a defense against the hurt.

Well, you have to consider. Severus poured his heart out to her, leaving himself vulrnerable and his heart completely in her hands. Then he doesn't hear one word from her for five days. So, he assumes that she is there to tell him she doesn't want him, and he's being defensive, trying to harden his heart. It had already been broken twice, and he never meant to put himself in a position where that could happen again, and yet... here he is. He's trying to protect himself. He wasn't really busy, he was just making excuses. Its not about her being under his control,

, its about him having control of his on feelings, and failing. He didn't want to love her, but he does, thus taking the control out of his hands.

His heart were broken twice, once by the girl leaving him for someone else, then by loosing his love in an accident. But, how does that differs from Hermione? First Ron broke her heart, then Severus crushed it back in Italy, worse, he trampled on it and spit on the remains with full intent and knowlegde of what he was doing. Is her heart less valuable?

See, now I don't think his temperament is unpredictable! ;-) I would say that after he told her everything about Shannon and Lily, and her knowing how tender his heart is, it shouldn't be surprising. He's defensive. He never wanted to be in the position of loving someone like that again, and now that he is, it makes him feel vulnerable. Not that I'm excusing his behavior and chastizing hers. This is a major life-altering decision for her, and I say she should take all the time she needs. I can just see why he acted that way. He thinks she is there to end things, and that put his defenses up. Big time.
