Thank you very much.  It just seemed to be a natural progression to use 'Master' for him.  As you said, he is a Potions master.  She also addressed Cecil Nottingham as Master Nottingham, so such a deviation from Professor, or 'hey you' would be natural to her.  If anything, Hermione Granger is respectful to those who deserve it.
